Silver dory with Italian black cabbage (Serves 4-6)

 
 

Ingredients:

4-6 plate-size silver dory fillets

Italian black cabbage

garlic, olive oil and cracked pepper to taste

1 Italian black cabbage or savoy cabbage

4 cloves garlic, crushed

olive oil

4 slices pancetta, chopped

pinch nutmeg

2 tablespoons currants

white wine

salt and pepper

 

For serving: lemon

Method

Bake the silver dory fillets in a moderate oven with crushed garlic, olive oil and pepper for about 10 minutes or until cooked as desired. 

Sauté the cabbage in a little olive oil with the diced pancetta, garlic, nutmeg and currants. Add a touch of white wine and season with salt and pepper. The cabbage is ready when it starts to soften.
