Pacific oyster tartare (Serves 6)

 
 

Ingredients:

36 oysters sliced in half, reserve shells

1/2 Spanish onion, finely chopped

2 lemons, segmented and diced

20 mL red wine vinegar

2 teaspoons horseradish

1/4 cup each of finely chopped fresh chives and tarragon

250 mL King Island créme fraîche

Beluga or salmon caviar (optional)

Method

Slice oysters in half, or if preferred, leave whole. Combine with remaining ingredients except the caviar and spoon into shells. Top with caviar and a few chives, if desired.
