Stir-fried octopus on angel hair pasta (Serves 4)

 
 

Ingredients:

500 g octopus (baby)

40 g soy sauce

100 g unsalted butter

400 g angel hair pasta

1 teaspoon sesame oil

1 teaspoon hot chilli oil

1 bunch shallots, thinly sliced

1 red capsicum, finely diced

1 yellow capsicum, finely diced

100 g morels or mixed mushrooms, cleaned and sliced

100 g shiitake mushrooms, cleaned and sliced

4 leaves fresh basil

 

For serving: pepper oil and fresh herbs of choice

Method

In a small saucepan, bring soy sauce to the boil and add the butter in chunks, stirring until all is incorporated. Set aside. Cook pasta in boiling salted water until ‘al dente’.

Combine the oils in a large non-stick pan, bring to smoke point and sauté the octopus for 1-2 minutes. Add the shallots, capsicum, mushrooms and torn basil. Season to taste.

To serve, place the cooked, drained pasta in a pan and toss through the soy butter. Place on the centre of plates, arrange octopus on top and garnish with pepper oil and some fresh herbs.
