Citrus crusted silver perch with ginger, star fruit and rum (Serves 4)

 
 

Ingredients:

4 x 150 g silver perch fillets

juice and finely chopped zest of 2 lemons

juice and finely chopped zest of 2 limes

1 jalapeño pepper, diced

1 tablespoon white peppercorns, crushed

2 tablespoons brown sugar

1 tablespoon coarse salt

1 tablespoon olive oil

2 star fruits, sliced crosswise

1 teaspoon sliced ginger root

60 mL rum

purple basil

Method

Combine lemon and lime zest, jalapeño pepper and white peppercorns and set aside. Combine juices with brown sugar in a small saucepan and simmer until about 3 tablespoons remain. Add salt and zest mixture. Cook for another minute, remove from heat, add olive oil and allow to cool.

Preheat oven to 1600C. Press the mixture onto one side of the silver perch fillets and bake crust side up, for 8-10 minutes.

Meanwhile, sautÈ the star fruits and ginger, add the rum and swirl around pan for a few seconds.

Serve fish with steamed jasmine rice with the star fruit, purple basil and rum.
